- 500g boneless chicken thighs
- 4 garlic cloves, minced
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 2 cups shredded lettuce
- 1/2 cup sliced pickles
- 4 rounds of pita bread
- 1/2 cup garlic sauce (toum)
Instructions
- In a bowl, mix chicken with yogurt, garlic, lemon juice, olive oil, paprika, cumin, cinnamon, salt, and pepper. Marinate for at least 2 hours or overnight.
- Heat a grill pan or skillet over medium-high heat and cook the marinated chicken until golden brown and cooked through, about 6–8 minutes per side.
- Warm the pita bread slightly to make it pliable for wrapping.
- Lay out each pita and layer with chicken, lettuce, cherry tomatoes, pickles, and garlic sauce.
- Wrap tightly in parchment or foil. Optionally, grill in a panini press for 2–3 minutes for a crispy finish.
- Slice in half and serve warm.
Notes
- Marinating overnight gives the deepest flavor.
- To save time, cook chicken in advance and assemble sandwiches later.
- Try adding fresh herbs like parsley or mint for extra brightness.
