1 lb chicken breast, diced
1 zucchini, chopped
1 red bell pepper, chopped
1 cup broccoli florets
2 tbsp lemon juice
1 tsp lemon zest
2 tbsp olive oil
¼ cup grated Parmesan
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
¼ tsp red pepper flakes (optional)
Fresh parsley (for garnish)
Cook the orzo:
Boil orzo in salted water according to package directions.
Drain and set aside.
Cook the chicken:
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add diced chicken, garlic powder, salt, and pepper.
