  • 1 cup orzo

  • 1 lb chicken breast, diced

  • 1 zucchini, chopped

  • 1 red bell pepper, chopped

  • 1 cup broccoli florets

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 2 tbsp olive oil

  • ¼ cup grated Parmesan

  • 1 tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano

  • ¼ tsp red pepper flakes (optional)

  • Fresh parsley (for garnish)

Instructions

  • Cook the orzo:

    • Boil orzo in salted water according to package directions.

    • Drain and set aside.

  • Cook the chicken:

    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

    • Add diced chicken, garlic powder, salt, and pepper.

    • Cook until browned and cooked through (about 6–8 minutes).

    • Remove chicken from skillet and set aside.

  • Sauté the vegetables:

    • In the same skillet, add remaining 1 tbsp olive oil.

    • Add chopped zucchini, bell pepper, and broccoli florets.

    • Sauté for 3–4 minutes until crisp-tender.

  • Combine everything:

    • Return cooked chicken and orzo to the skillet.

    • Stir in lemon juice, lemon zest, oregano, and red pepper flakes (if using).

    • Cook for another 2 minutes, stirring gently.

 

  • Finish & serve:

    • Sprinkle with grated Parmesan and garnish with fresh parsley.

    • Serve warm.

Notes

  • For extra flavor, deglaze the pan with a splash of white wine before adding the orzo back in.

  • Swap veggies based on what you have—snap peas, spinach, or mushrooms work great too.

 

  • Want it creamier? Add a splash of heavy cream or a spoonful of Greek yogurt before serving.
