Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until well combined.
- Add the chicken pieces to the bowl and toss until evenly coated with the marinade. Let rest for at least 30 minutes.
- Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
- Thread the marinated chicken pieces evenly onto skewers.
- Place the skewers on the hot grill and cook for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- Remove from the grill and sprinkle with fresh parsley while hot.
- Serve immediately with extra lemon wedges if desired.
