- 1 cup cooked and chopped lobster meat
- 1 cup shredded cheddar cheese
- 4 slices sturdy bread

Instructions
- Heat a nonstick skillet over medium heat
- In a bowl, gently mix lobster meat with shredded cheddar cheese and parsley
- Spread butter evenly on one side of each bread slice
- Layer cheese and lobster mixture between unbuttered sides of bread slices
- Place the sandwich in the skillet, buttered side down, cooking until golden brown, then flip carefully and cook the other side
- Press lightly with a spatula to meld the cheese and lobster together
- Slice diagonally and serve warm
