Ingredients

Scale
  • 1 lb ground turkey or ground chicken 🍗
  • 1/2 lb chicken livers, finely chopped (optional) 🍗
  • 1 1/2 cups long-grain rice 🍚
  • 1 small onion, finely diced 🧅
  • 1 bell pepper, finely diced 🫑
  • 2 celery stalks, diced 🌱
  • 3 cloves garlic, minced 🧄
  • 1 tbsp Cajun seasoning 🌶️
  • 1/2 tsp dried thyme 🌿
  • 1/2 tsp smoked paprika 🌶️
  • 1/4 tsp cayenne pepper (optional) 🔥
  • 2 1/2 cups chicken broth 🍲
  • 2 tbsp vegetable oil 🛢️
  • Salt and black pepper to taste 🧂
  • 3 green onions, chopped (for garnish) 🌿
  • Fresh parsley, chopped (for garnish) 🌿

Instructions

  • Cook the meat:
Heat the vegetable oil in a large skillet over medium heat. Add the ground turkey or chicken and chicken livers (if using). Cook until browned, breaking the meat into small pieces as it cooks. Season with a pinch of salt and black pepper.
  • Sauté the vegetables:
Add the onion, bell pepper, celery, and garlic to the skillet. Cook until the vegetables are soft and fragrant, about 5 minutes.
  • Season and simmer:
Stir in the Cajun seasoning, thyme, smoked paprika, and cayenne pepper (if using). Cook for 1-2 minutes, allowing the spices to toast and release their flavors.
  • Cook the rice:
Add the uncooked rice to the skillet and stir well to coat it with the seasonings and meat mixture. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  • Garnish and serve:
Fluff the rice with a fork and stir in the green onions and fresh parsley. Taste and adjust the seasoning with salt and black pepper, if needed.

Notes

  • For a richer flavor, you can add the optional chicken livers to the dish. They provide an authentic depth of flavor typical of dirty rice.
  • Adjust the amount of cayenne pepper based on your preferred spice level.
  • You can substitute ground beef or pork for the ground turkey or chicken, depending on your preference.
