Crispy baked fries with a Cajun kick, drizzled with creamy ranch and cheese sauce for a perfect savory snack or side dish.

For the Fries:

  • 6 medium russet potatoes
  • 2 tbsp extra virgin olive oil
  • 12 tbsp Cajun seasoning
  • ¼ cup creamy ranch dressing (plus extra for dipping)

For the Creamy Cheese Sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • ⅔ cup milk
  • 2 cups shredded cheddar cheese

Instructions

  • Prepare the Fries: Wash, scrub, and pat dry potatoes. Peel and slice into thick fries (¾ inch x 3 inches).
  • Steam the Potatoes: Boil 1 quart of water, season with 3 tbsp salt. Using a basket or colander, steam potatoes over the simmering water for 10–12 minutes until tender but firm.
  • Coat and Bake: Transfer potatoes to a bowl and drizzle with olive oil, tossing to coat evenly. Arrange in a single layer on a nonstick baking sheet. Bake at 450°F for 10 minutes. Rotate the pan and bake another 5–10 minutes, watching closely to avoid burning.
  • Make the Cheese Sauce: Melt butter in a saucepan over medium heat. Whisk in flour and milk until smooth. Add cheese and stir until fully melted and creamy.
  • Assemble: Sprinkle Cajun seasoning over the baked fries and toss gently. Drizzle with ranch dressing and ¼ cup cheese sauce. Serve remaining cheese sauce and ranch on the side for dipping.

Notes

  • You can adjust the amount of Cajun seasoning depending on how spicy you like it.
  • For a more indulgent experience, top the fries with additional cheese sauce or even some chopped green onions.
