Ingredients

  • Crust:
    • Graham cracker crumbs

Instructions

  • Preheat Oven:
    Set your oven to 325°F (163°C).
  • Prepare Crust:
    In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
  • Make Cheesecake Filling:
    In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add vanilla extract and eggs, one at a time, beating until incorporated.
    Add lemon juice, lime juice, lemon zest, lime zest, chopped pistachios, and chopped cherries. Mix until fully combined.
  • Bake:
    Pour the cheesecake batter over the cooled crust. Bake for 50-60 minutes or until the center is set but still slightly wobbly.
    Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  • Cool:
    After 1 hour, remove the cheesecake from the oven. Transfer it to the refrigerator and let it chill for at least 4 hours or until fully set.
  • Serve:
    Before serving, top the cheesecake with whipped cream, fresh cherries, and chopped pistachios for garnish.
