- 12 oz elbow macaroni
- 2 cups broccoli florets
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups whole milk
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- Cook macaroni in salted boiling water until slightly tender then drain.
- Steam broccoli for 3 to 4 minutes until bright green.
- Melt butter in a saucepan over medium heat and whisk in flour. Cook for 1 minute.
- Slowly whisk in milk and cook until the sauce thickens.
- Stir in cheddar cheese, mozzarella cheese, garlic powder, salt, and black pepper until melted.
- Combine cooked macaroni and broccoli with the cheese sauce.
- Transfer mixture to the baking dish and bake for 20 minutes until lightly golden.
- Let the dish rest for a few minutes before serving.
Notes
- Use freshly shredded cheese for the smoothest sauce.
- Slightly undercook pasta before baking so it stays tender.
- Add a splash of milk when reheating leftovers to restore creaminess.
