This creamy, flavorful salmon recipe features a rich garlic-Parmesan sauce with sun-dried tomatoes and fresh spinach. The perfect dish for a special occasion or a romantic dinner!

For the Salmon:

  • 4 salmon fillets (6 oz each, skinless or with skin)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste

For the Sauce:

  • 2 tbsp unsalted butter
  • 34 garlic cloves, minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth (or vegetable broth)
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp chili flakes (optional, for heat)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried basil (or Italian seasoning)
  • 1/2 cup fresh spinach, chopped
  • Salt & pepper to taste

Instructions

  • Prep the Salmon: Pat the salmon fillets dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Cook the Salmon: Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for about 3-4 minutes per side until golden and cooked to your desired doneness. Remove the fillets and set aside.
  • Make the Sauce: In the same skillet, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream, chicken broth, and Parmesan cheese. Mix until the cheese melts and the sauce thickens slightly.
  • Add Flavor: Stir in chili flakes (if using), sun-dried tomatoes, and dried basil. Simmer for 2-3 minutes.
  • Combine & Finish: Add the fresh spinach and stir until wilted. Return the salmon fillets to the skillet, spoon the creamy sauce over the salmon, and let everything simmer for 2 more minutes to combine the flavors.
  • Serve: Garnish with fresh basil or parsley, if desired. Serve warm with rice, mashed potatoes, or pasta for a perfect meal!
