For the Meatballs:

  • 1 lb ground beef
  • 1/4 cup breadcrumbs

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for frying)

For the Fries:

  • 3 large potatoes, peeled and sliced into fries
  • 3 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt, to taste

For the Salad:

  • 2 cups mixed greens (e.g., romaine, radicchio, spinach)
  • 1 cucumber, sliced
  • 2 tomatoes, sliced into wedges
  • 1/4 red onion, thinly sliced
  • 2 tbsp feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  • Prepare the Fries: Preheat the oven to 425°F (220°C). Toss the sliced potatoes with olive oil, smoked paprika, garlic powder, and salt. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  • Make the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper. Mix until just combined. Form into small meatballs, about 1.5 inches in diameter. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for 10-12 minutes, turning occasionally, until browned and cooked through.
  • Prepare the Salad: In a large bowl, combine mixed greens, cucumber, tomatoes, red onion, and feta cheese. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper. Pour over the salad and toss to coat evenly.
  • Assemble and Serve: Plate the crispy fries, meatballs, and fresh salad on a large dish or individual bowls. Serve immediately with lemon wedges on the side for extra zest, if desired.

  • You can customize the salad by adding other ingredients like olives, avocado, or grilled chicken.
