- 1 pound chicken thighs or tenders, skinless and boneless
- 1 cup Greek yogurt
- 1 medium cucumber, chopped
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 cup kalamata olives, pitted
- 1/2 red onion, thinly sliced
- 1 large tomato, chopped
- 1 cup romaine lettuce, shredded
- 4 flatbreads or pita rounds
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Heat your grill pan or skillet over medium-high heat.
- In a bowl, mix chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper. Let marinate for at least 15 minutes.
- Lightly oil the skillet or grill pan.
- Grill chicken 5–6 minutes per side until cooked through, then slice into strips.
- In a separate bowl, mix Greek yogurt, chopped cucumber, garlic, dill, lemon juice, salt, and pepper to make tzatziki.
- Warm your flatbreads until just golden and pliable.
- Layer lettuce, tomatoes, cucumbers, onions, olives, grilled chicken, and a generous spoonful of tzatziki in each wrap.
- Roll it up tight, slice if desired, and serve fresh.
