This cheesy and flavorful Mexican White Trash Casserole is a family favorite, combining crunchy Doritos, creamy chicken, and zesty spices. It’s the ultimate comfort food, perfect for quick weeknight dinners or potlucks. Everyone will want seconds!

Ingredients

  • 1 bag Nacho Doritos, crushed
  • 2 cups shredded chicken
  • 2 cups shredded cheese
  • 1 can cream of chicken soup
  • 1 can Ro’tel tomatoes (with diced green chilies)
  • ½ cup sour cream
  • ½ cup milk
  • ½ package taco seasoning

Instructions

  • Preheat the Oven:
    Set your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  • Mix the Filling:
    In a bowl, combine shredded chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning. Stir well.
  • Layer the Casserole:
    Spread half of the crushed Doritos on the bottom of the dish. Add half of the chicken mixture on top. Repeat the layers, and top with shredded cheese if desired.
  • Bake:
    Cover with foil and bake for 35 minutes. Remove foil during the last 10 minutes for a crispy top.
  • Serve:
    Let the casserole cool for a few minutes before serving. Enjoy!

Notes

  • You can adjust the level of spiciness by adding more or less of the Ro’tel tomatoes.
  • This casserole can be made ahead of time and stored in the fridge before baking.
