Ingredients

  • 2 teaspoons Baking Soda
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Ground Cloves
  • 1/4 teaspoon Salt
  • 3/4 cup Unsalted Butter (softened)
  • 1 cup Brown Sugar (packed)
  • 1 large Egg
  • 1/4 cup Molasses
  • 1 teaspoon Vanilla Extract
  • Granulated Sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, then add molasses and vanilla.
  4. Gradually mix dry ingredients into wet ingredients until fully combined. Chill dough for 30 minutes.
  5. Roll dough into 1-inch balls and coat with granulated sugar. Place 2 inches apart on baking sheets.
  6. Bake for 10 to 12 minutes, until edges are set and tops crackle but centers remain soft.
  7. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

  • Chill dough to prevent spreading and enhance flavor.
