These cream puffs are a classic treat filled with a creamy, dreamy filling that has been a family favorite for generations. Light, airy, and indulgent, they’re perfect for special occasions or whenever you crave a little sweetness in your life.

For the Puffs:

  • 1 stick butter (8 tablespoons)
  • 1 cup water
  • 1 teaspoon vanilla
  • 4 large eggs
  • 1 cup all-purpose flour

For Mom’s Famous Filling:

  • 1 pint heavy cream
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1/3 cup milk

Instructions

  • Make the Puffs:
    • In a medium saucepan, bring the butter, water, and vanilla to a boil.
    • Add the flour and stir constantly until the mixture leaves the side of the pot and forms a ball.
    • Remove from heat and allow the dough to cool slightly.
    • Beat in the eggs, one at a time, mixing until smooth after each addition.
    • Drop tablespoon-sized portions onto a parchment-lined baking sheet.
    • Bake at 400°F (200°C) for 25–30 minutes or until golden brown and puffed.
    • Remove from the oven and let cool completely.
  • Make the Filling:
    • In a mixing bowl, beat the heavy cream, pudding mix, and milk together until thick and creamy, resembling whipped cream.
  • Assemble the Cream Puffs:
    • Slice each puff in half and fill with the prepared filling, either by piping or scooping.
    • Dust the tops with powdered sugar for a finishing touch.

Notes

  • For best results, use cold heavy cream for the filling.
  • These puffs are best served the same day they are made. Store leftovers in an airtight container in the refrigerator.
