For the Cupcakes:

  • 1 box yellow cake mix (plus ingredients on the back of the box)

For the Monster Cookie Dough:

  • 4 oz cream cheese, room temperature
  • 1/4 cup butter, room temperature
  • 1 cup smooth peanut butter
  • 1/2 cup powdered sugar
  • 3 tbsp brown sugar
  • 1/4 cup flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup quick oats
  • 1 cup mini chocolate chips
  • 1 cup mini M&Ms

For the Monster Cookie Dough Frosting:

  • 2 sticks butter, room temperature
  • 1/4 cup brown sugar
  • 1/4 cup smooth peanut butter
  • 2 tsp vanilla extract
  • 68 cups powdered sugar (adjust for consistency)
  • 1 cup mini chocolate chips
  • 1 cup mini M&Ms

Instructions

Prepare the Cookie Dough:

  1. In a mixing bowl, cream together the cream cheese, butter, and peanut butter until smooth.
  2. Beat in the powdered sugar, brown sugar, flour, vanilla, and a pinch of salt until fully incorporated.
  3. Stir in the oats, mini chocolate chips, and M&Ms.
  4. Scoop out tablespoon-sized portions of the cookie dough and roll them into balls.
  5. Place the cookie dough balls on a baking sheet and freeze for about 1 hour.

Bake the Cupcakes:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the yellow cake mix according to the package instructions.
  3. Line a muffin tin with cupcake liners and pour the batter into each liner, filling about 2/3 full.
  4. Take the frozen cookie dough balls and gently press one into the center of each cupcake batter.
  5. Bake for 14-16 minutes, or until a toothpick inserted into the cake comes out clean (the cookie dough center may still be soft).
  6. Allow the cupcakes to cool completely before frosting.

Make the Frosting:

  1. Beat the butter, brown sugar, peanut butter, and vanilla extract together until smooth and creamy.
  2. Gradually add powdered sugar, one cup at a time, until the frosting reaches your desired consistency.
  3. Stir in the mini chocolate chips and M&Ms.
  4. Frost the cooled cupcakes generously with the frosting.

  • Ensure the cookie dough is fully frozen before pressing it into the cupcakes; this helps keep it from spreading too much while baking.
  • If you prefer a thicker frosting, you can add more powdered sugar.
