MUFFINS THAT TASTE LIKE DOUGHNUTS

These light, fluffy muffins are rolled in cinnamon sugar, giving them a classic doughnut-like flavor without the frying!  Easy to make with simple pantry ingredients, they’re perfect for breakfast, brunch, or an anytime treat!

For the Muffins:

  • ¾ cup sugar

  • 1 large egg

  • 1½ cups all-purpose flour

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • ¼ teaspoon ground nutmeg

  • ¼ cup vegetable oil

  • ¾ cup milk

  • 1 teaspoon vanilla extract

For the Coating:

  • 2 tablespoons melted butter

  • ½ cup sugar + 1 teaspoon cinnamon (for rolling)

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.

  • Mix Wet & Dry: In a bowl, beat together sugar and egg. In a separate bowl, whisk together flour, baking powder, salt, and nutmeg.

  • Combine: Stir in oil, milk, and vanilla extract. Mix until smooth and well combined.

  • Fill & Bake: Pour batter into muffin cups, filling each about ¾ full. Bake for 15–18 minutes, or until a toothpick inserted comes out clean.

  • Cinnamon Sugar Coating: Brush warm muffins with melted butter, then roll them in the cinnamon sugar mixture.

 

  • Cool & Enjoy: Let cool slightly (if you can wait!) and enjoy these irresistible doughnut-like muffins

Notes

  • For extra cinnamon flavor, add ½ teaspoon cinnamon to the batter.

  • These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.

 

  • Want a twist? Swap nutmeg for pumpkin spice or add a pinch of cardamom!
