Instructions

  • Preheat Oven:
    Preheat your oven to 350°F (175°C).
    Spray a quiche pan or pie dish with nonstick cooking spray. Place the dish on a baking sheet for easier handling.
  • Layer the Vegetables:
    Start with 1 cup of diced yellow onion, spreading it evenly across the bottom of the pan.
    Sprinkle 1 cup of chopped baby spinach over the onion layer.
    Arrange 1 cup of sliced cherry tomatoes, followed by 1/2 cup of shredded cheese and 1/2 cup of sliced mushrooms on top.
  • Prepare the Egg Mixture:
    In a medium bowl, whisk together 8 large eggs, 1/2 cup heavy cream, 1/2 tsp ground mustard, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper.
  • Assemble the Frittata:
    Gently pour the egg mixture over the vegetables, ensuring an even spread.
    Use a fork to rearrange any veggies that may have shifted.
  • Bake:
    Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
