Savor the rich, savory flavors of these Mushroom Sandwich Melts, featuring sautéed mushrooms, melted mozzarella, and sharp cheddar cheese all grilled between slices of sourdough. Perfect for a quick and delicious lunch or dinner!

  • 1 tbsp olive oil
  • 250g (½lb) mushrooms, sliced
  • 2 tbsp butter
  • 2 garlic cloves, crushed
  • ½ tsp chili flakes (optional)
  • 1 tsp dried oregano
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 8 slices sourdough bread
  • 1 cup mozzarella cheese, grated
  • 1 cup mature or sharp cheddar cheese, grated
  • Extra butter for grilling

Instructions

  1. Heat olive oil in a pan over medium-high heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes.
  2. Add butter, crushed garlic, chili flakes (if using), and dried oregano to the pan. Cook for another 2-3 minutes, or until fragrant.
  3. Season the mushroom mixture with lemon juice, salt, and pepper. Stir well and set aside.
  4. In a separate bowl, combine the mozzarella and cheddar cheeses.
  5. Lay out 4 slices of sourdough bread. On each slice, layer a portion of the cheese mixture, followed by a generous helping of the sautéed mushrooms. Top with another slice of bread to form a sandwich.
  6. Butter the outside of each sandwich with additional butter.
  7. Grill the sandwiches in a preheated pan over medium heat, turning occasionally, until both sides are golden brown and the cheese is melted (about 4-5 minutes per side).
  8. Serve hot and enjoy!

  • For a richer flavor, you can add a dash of balsamic vinegar or a spoonful of pesto to the mushroom mixture.
  • You can also substitute the sourdough bread with another type of bread if you prefer.
