Ingredients

Scale
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups sifted all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the butter, peanut butter, sugar, brown sugar, egg, and vanilla extract until smooth and well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing well until combined.
  • Roll the dough into 1-inch balls and place them on an ungreased cookie sheet.
  • Using a fork, gently press down on each cookie to flatten it. You can dip the fork in sugar or flour before pressing to prevent sticking and add a little extra sweetness.
  • Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a fun twist, try adding chocolate chips or chopped peanuts to the dough for added texture and flavor.
  • The dough can be refrigerated for up to 24 hours if you want to prepare it ahead of time.
  • Make sure to press the cookies down with the fork before baking to create the classic peanut butter cookie pattern.
