These moist and flavorful carrot cupcakes are made with a delightful blend of grated carrots and crushed pineapple, topped with creamy cream cheese frosting. A fun and festive treat, decorated to look like little carrots with colorful writing gel!

  • 12 paper cupcake liners
  • 1 package Nana’s Apple Cake Mix®
  • 2 cups grated carrots
  • 1 (8 ounce) can crushed pineapple in natural juices, well drained
  • 2 large eggs
  • 1 (16 ounce) container cream cheese frosting
  • Orange and green writing gel (for decoration)

Instructions

  • Preheat the Oven:
    • Preheat the oven to 375°F (190°C).
    • Line a 12-count muffin pan with paper cupcake liners.
  • Mix the Batter:
    • In a large bowl, combine Nana’s Apple Cake Mix, grated carrots, drained crushed pineapple, and eggs.
    • Mix until well combined.
  • Bake the Cupcakes:
    • Divide the batter evenly among the cupcake liners.
    • Bake for about 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
    • Let the cupcakes cool completely.
  • Frost and Decorate:
    • Frost the cooled cupcakes with cream cheese frosting.
    • Use orange writing gel to create a carrot shape on each cupcake by making a zig-zag motion to form a triangle.
    • Use green writing gel to create the carrot tops.

Notes

  • You can use any type of carrot cake mix if you don’t have Nana’s Apple Cake Mix®.
  • The writing gel can be found in the baking aisle and adds a fun touch for kids and adults alike.
