Ingredients

  • 250 grams Biscoff biscuits, crushed finely
  • 120 grams unsalted butter, melted
  • 400 grams cream cheese, softened
  • 100 grams powdered sugar
  • 240 milliliters heavy cream, cold
  • 200 grams Biscoff spread
  • 6 whole Biscoff biscuits for topping
  • 2 tablespoons crushed Biscoff crumbs for garnish

Instructions

  1. Line an 8×8 inch square pan with parchment paper.
  2. Mix crushed Biscoff biscuits with melted butter until evenly combined.
  3. Press the mixture firmly into the pan to form an even base. Chill for 20 minutes.
  4. Beat cream cheese and powdered sugar until smooth and creamy.
  5. Whip heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
  6. Spread the filling evenly over the chilled base.
  7. Warm the Biscoff spread slightly until pourable, then spread evenly over the filling.
  8. Refrigerate for at least 4 hours until fully set.
  9. Top with whole biscuits and sprinkle crushed crumbs before slicing and serving.
