Ingredients
- Graham cracker crumbs – 2 cups
- Unsalted butter, melted – 1/2 cup

- Powdered sugar – 1 cup
- Heavy cream – 1 cup

- Blueberries, fresh or frozen – 3 cups

- Lemon juice – 1 tablespoon
- Cornstarch – 1 tablespoon
Instructions
- In a bowl, mix graham cracker crumbs with melted butter until evenly combined.
- Press the crumb mixture firmly into the bottom of a 9×9 inch dish to form the crust.
- In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla and mix until creamy.
- Whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
- Spread the cream layer evenly over the prepared crust.
- In a saucepan over medium heat, combine blueberries, granulated sugar, lemon juice, and cornstarch.
- Cook while stirring until the mixture thickens, then remove from heat and let it cool completely.
- Once cooled, spread the blueberry topping evenly over the cream layer.
- Refrigerate for at least 4 hours before slicing and serving.

- For cleaner slices, chill overnight and use a warm knife.
