These No-Bake Coconut Pecan Praline Cookies offer a decadent blend of sweetened coconut, crunchy pecans, and a rich caramelized base. A fuss-free, oven-free treat that delivers the perfect chewy texture with a nutty crunch!

Ingredients

  • 2 cups pecans

  • 2 cups sweetened shredded coconut

  • 1 1/2 cups granulated sugar

  • 1 cup brown sugar

  • 1/2 cup evaporated milk

  • 1/2 cup light corn syrup

  • 1/2 cup (1 stick) unsalted butter

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

Instructions

  • Prepare the saucepan: In a large saucepan, combine the granulated sugar, brown sugar, evaporated milk, corn syrup, and butter over medium-high heat. Stir continuously until the mixture is well combined and smooth.

  • Boil the mixture: Bring the mixture to a boil and let it boil for 3 minutes, stirring occasionally.

  • Remove from heat: Take the saucepan off the heat and immediately stir in the vanilla extract and salt until fully incorporated.

  • Mix in coconut & pecans: Gradually add the shredded coconut and pecans, stirring continuously for 3-4 minutes as the mixture thickens.

  • Scoop the cookies: Use a tablespoon or small scoop to drop portions of the mixture onto wax paper-lined baking sheets.

  • Let them set: Allow the cookies to harden at room temperature for at least 2 hours. For faster setting, place them in the freezer until firm.

 

  • Serve & enjoy: Once solidified, the cookies are ready to enjoy!

Notes

  • For extra flavor, toast the pecans before adding them to the mixture.

  • If the cookies are too sticky, chill them in the fridge or freezer.

 

  • Swap light corn syrup for maple syrup for a richer depth of flavor.
