These Nutella Halva Babka Buns are a decadent twist on the classic babka, filled with a rich Nutella spread, crumbled pistachio halva, and semi-sweet chocolate chips. Perfect for breakfast, brunch, or dessert, these soft, fluffy buns are drizzled with a sweet sugar glaze for an irresistible finish.

Dough

  • 3 3/44 1/4 cups all-purpose flour, divided
  • 1/3 cup sugar
  • 1/2 teaspoon kosher salt
  • 1 tablespoon active dry yeast
  • 6 tablespoons butter, at room temperature
  • 3/4 cup milk, warmed to 110-115°F
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons grated lemon zest
  • 2 large eggs, at room temperature

Filling

  • 1 (13-oz.) jar Nutella
  • 6 ounces pistachio halva, crumbled
  • 1/2 cup semi-sweet chocolate chips

Optional Sugar Glaze

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 tablespoons butter

Instructions

  • In a mixer bowl, whisk 1.5 cups flour, sugar, salt, and yeast. Cut in the room temperature butter until the mixture is crumbly.
  • Warm milk to 110-115°F. Add vanilla, milk, and lemon zest to the dry ingredients. Beat until evenly moistened.
  • Add eggs, beat for 2 minutes. Gradually add the remaining flour until a firm dough forms. Knead on a floured surface for 5-7 minutes until smooth.
  • Place dough in a greased bowl, turning it to coat. Cover and let rise in a warm place for 1 hour or until doubled in size.
  • Divide dough into 8 pieces. Roll each into a 10×5-inch rectangle. Spread with Nutella, sprinkle with halva and chocolate chips. Roll up the dough, cut it lengthwise, twist, and form into knots.
  • Let the shaped buns rise for 30 minutes.
  • Bake at 375°F for 15-20 minutes, until golden. Brush with optional sugar glaze while hot.

Notes

  • You can substitute other nut butters for Nutella if desired, though Nutella provides a rich, creamy texture that’s hard to beat.
  • Feel free to experiment with other fillings, like almond paste or cinnamon sugar, for a different twist!
