  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 large russet potatoes, peeled and grated
  • 1 medium yellow onion, grated
  • 2 large eggs
  • 3 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons vegetable oil
  • 1/2 cup sour cream
  • 1/2 cup applesauce

Instructions

  2. In a large bowl combine grated potatoes, grated onion, eggs, flour, salt, and black pepper.
  3. Mix well until all ingredients are evenly incorporated.
  4. Scoop portions of the mixture and flatten into small pancakes.
