This vegetarian Onion Cottage Cheese Tart combines creamy cottage cheese, sweet pearl onions, and a flaky shortcrust for a delightful lunch or starter. Perfect when paired with a crisp salad and a glass of white wine for a refreshing meal.

For the Tart:

  • 1 pie crust (store-bought or homemade)
  • 250 g cottage cheese
  • 50 g Parmigiano, grated
  • 1 egg
  • 40 g pearl onions (34 onions)
  • 1/3 tsp salt
  • 2 tbsp olive oil
  • Black pepper, freshly cracked

Instructions

  • Pre-Bake the Crust:
    • Preheat your oven to 200°C (390°F).
    • Press the pie crust into a tart pan, ensuring it covers the base and sides evenly.
    • Prick the bottom and sides of the crust with a fork to prevent puffing during baking.
    • Bake the crust for 10 minutes, then remove it from the oven.
  • Prepare the Filling:
    • In a mixing bowl, crack an egg and lightly whisk it with a fork.
    • Add the cottage cheese, grated Parmigiano, and salt to the bowl. Mix until well combined.
  • Slice the Onions:
    • Peel the pearl onions and thinly slice them lengthwise.
    • Lightly brush the top side of the onion slices with olive oil.
  • Assemble the Tart:
    • Spread the cheese and egg mixture evenly over the pre-baked crust.
    • Arrange the oiled onion slices over the filling, with the oiled side facing up.
    • Dust the top with freshly cracked black pepper.
  • Bake the Tart:
    • Return the tart to the oven and bake for 30–35 minutes, or until the filling is set and the top is golden.

Notes

  • For a more complex flavor, you can add fresh herbs like thyme or rosemary to the filling or garnish.
  • This tart can also be served warm or at room temperature, making it a versatile dish for various occasions.
