Ingredients
Scale
1/4 cup all-purpose flour
1/2 tsp baking powder
1 tbsp sugar (or sweetener of choice)
Pinch of salt
3 tbsp milk (or any milk alternative)
1 tbsp melted butter (or vegetable oil)
1/4 tsp vanilla extract (optional)
Instructions
Mix Dry Ingredients: In a microwave-safe mug, combine the flour, baking powder, sugar, and salt. Stir until evenly combined.
Add Wet Ingredients: Add the milk, melted butter, and vanilla extract (if using). Stir until you have a smooth batter.
Microwave: Microwave on high for 60–90 seconds, depending on your microwave. Start with 60 seconds and add 10-second intervals if the center isn’t fully set.
Serve: Let it cool slightly, then enjoy straight from the mug or transfer it to a plate. Top with syrup, butter, fruit, or whipped cream for extra flair.
Notes
For a fluffier pancake, you can add a little extra milk.
Get creative with toppings! Fresh fruit, chocolate chips, or a sprinkle of cinnamon are great options.
