Ingredients

Scale

For the Cookie Crust:

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Brownie Topping:

  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

For the Peanut Butter Swirl:

  • ½ cup creamy peanut butter
  • ¼ cup powdered sugar
  • 2 tablespoons milk

Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9-inch round pizza pan or line it with parchment paper.
  • Prepare Cookie Crust: In a bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix well. Gradually add the dry ingredients to the wet ingredients and mix until combined. Press the dough evenly into the prepared pizza pan.
  • Prepare Brownie Topping: In a saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar, eggs, and vanilla extract. Beat in the cocoa powder, flour, and salt until smooth. Spread the brownie batter evenly over the cookie crust.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Let the pizza cool completely in the pan.
  • Prepare Peanut Butter Swirl: In a small bowl, mix together the creamy peanut butter, powdered sugar, and milk until smooth.
  • Serve: Drizzle the peanut butter mixture over the cooled brownie pizza and slice it into 8-10 servings.

Notes

  • Make sure the brownie topping is slightly jiggly when you take it out of the oven for that fudgy texture.
  • Let the pizza cool completely before adding the peanut butter swirl for the best presentation.
  • You can also top with additional chopped peanuts or chocolate chips for extra crunch
