Ingredients

  • 3 tablespoons soy sauce

  • 1 tablespoon ginger, grated
  • 2 tablespoons honey
  • 1/2 cup coconut milk
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat grill or grill pan over medium heat
  2. Mix peanut butter, soy sauce, lime juice, garlic, ginger, honey, coconut milk, and spices
  3. Lightly oil the grill surface
  4. Thread marinated chicken onto skewers
  5. Grill for 10 to 12 minutes, turning occasionally
  6. Brush extra sauce and garnish with cilantro
  7. Serve hot with lime wedges
