- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons honey
- 1/2 cup coconut milk
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cilantro, chopped
- Lime wedges for serving
Instructions
- Preheat grill or grill pan over medium heat
- Mix peanut butter, soy sauce, lime juice, garlic, ginger, honey, coconut milk, and spices
- Lightly oil the grill surface
- Thread marinated chicken onto skewers
- Grill for 10 to 12 minutes, turning occasionally
- Brush extra sauce and garnish with cilantro
- Serve hot with lime wedges
