Instructions
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla and peppermint extracts.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in the crushed peppermint and white chocolate chips.
- Scoop dough onto prepared baking sheets, spacing 2 inches apart.
- Bake for 9 to 11 minutes or until edges are set.
- Cool on the tray for 5 minutes, then transfer to a wire rack to finish cooling.
Notes
- Do not overbake — cookies will continue to firm up as they cool.

- For extra flair, press a few chocolate chips on top of each cookie before baking.
