  • 810 chicken drumsticks (approximately 1 kg)
  • 5 tablespoons peri peri sauce (store-bought or homemade)
  • 1 teaspoon sweet smoked paprika
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • 12 tablespoons fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the chicken drumsticks with peri peri sauce, smoked paprika, salt, and black pepper. Mix well to coat the chicken evenly. Cover and marinate for at least 1 hour, preferably overnight in the refrigerator.
  2. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper or lightly grease it.
  3. Arrange the marinated drumsticks on the prepared tray, ensuring they are spaced apart.
  4. Bake in the preheated oven for 40-45 minutes, turning the drumsticks halfway through, until the chicken is cooked through and the skin is crispy.
  5. Remove from the oven and drizzle with fresh lemon juice. Garnish with chopped parsley before serving.

Notes

  • For a spicier version, add finely chopped fresh chilies to the marinade.
  • Serve with a side of rice, grilled vegetables, or a fresh salad.
  • Ensure the chicken reaches an internal temperature of 75°C (165°F) to confirm it’s fully cooked.
