  • 1 ½ cups (180 grams) graham cracker crumbs (about 12 full sheets of graham crackers)
  • ⅓ cup (67 grams) granulated sugar
  • 6 tablespoons (85 grams) salted butter, melted

For the Filling:

  • 32 ounces (908 grams) Philadelphia cream cheese
  • 1 cup (200 grams) granulated sugar
  • 3 eggs, room temperature
  • 2 teaspoons (10 ml) vanilla extract
  • 2 teaspoons (10 ml) lemon juice

Instructions

  1. Preheat Oven and Make the Crust:
    • Preheat the oven to 375°F (190°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until the mixture resembles fine sand.
    • Press the crumb mixture into the bottom of a 9-inch springform pan.
    • Bake the crust for 7-8 minutes, then remove it from the oven and set it aside to cool.
  2. Prepare the Filling:
    • Reduce the oven temperature to 325°F (165°C).
    • In a large mixing bowl, beat the cream cheese and sugar at medium speed until creamy and smooth (about 2 minutes).
    • Add the eggs one at a time, mixing on low speed and scraping down the sides of the bowl after each addition.
    • Mix in the vanilla extract and lemon juice on low speed.
  3. Bake the Cheesecake:
    • Pour the cream cheese mixture over the prepared crust and smooth the top.
    • Bake for 70-85 minutes, or until the center is set.
  4. Cool the Cheesecake:
    • Turn off the oven, open the door slightly, and let the cheesecake cool inside the oven for 1 hour. This helps prevent cracking.
    • Afterward, let the cheesecake cool at room temperature for another 1 hour, then refrigerate it for at least 1 hour, or preferably overnight.
  5. Serve:
    • Top with your favorite fruit, pie filling, chocolate, or caramel sauce, if desired.
