A unique and delicious twist on traditional pie! This pinto bean pie has a creamy, spiced filling with a slight sweetness, making it a comforting dessert for any occasion.

  • 15.5 oz can pinto beans, rinsed and drained
  • 3/4 cup evaporated milk
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 large eggs, lightly beaten
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon molasses
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 (9-inch) prepared pie crust

Instructions

  • Preheat Oven: Preheat the oven to 375°F (190°C).
  • Blend Filling: In a blender, combine pinto beans, evaporated milk, white sugar, brown sugar, eggs, molasses, butter, cinnamon, nutmeg, and salt. Blend until smooth, about 40 seconds.
  • Prepare Pie: Pour the mixture into the prepared pie crust.
  • Bake the Pie: Bake in the preheated oven for 35-40 minutes, or until the pie is set in the center.
  • Cool: Allow the pie to cool for an hour before serving.

Notes

  • You can top the pie with whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
  • If you don’t have a pre-made pie crust, you can easily make your own or use a graham cracker crust for a different texture.
