A nutty, creamy, and indulgent twist on the classic Brazilian brigadeiro, these Pistachio Brigadeiros are rich, chewy, and melt-in-your-mouth delicious! Made with sweetened condensed milk, white chocolate, and pistachios, they’re perfect for special occasions, gifts, or just a sweet treat.

(Makes ~12 Brigadeiros)

  • 1 can (14 oz/395g) sweetened condensed milk
  • ½ cup white chocolate chips (or chopped white chocolate)
  • 1 tablespoon unsalted butter
  • ½ teaspoon vanilla extract
  • ½ cup finely ground pistachios (plus extra for rolling)
  • Pinch of salt

Instructions

  1. Cook the Brigadeiro Mixture

    • In a nonstick saucepan, combine sweetened condensed milk, white chocolate, butter, vanilla, and salt over low heat.
    • Stir constantly with a rubber spatula or wooden spoon, making sure the mixture doesn’t burn.
    • Cook for 10-15 minutes, or until the mixture thickens and pulls away from the bottom of the pan when stirred.
  2. Stir in the Pistachios

    • Stir in ground pistachios and mix until evenly combined.
  3. Cool & Roll

    • Transfer the mixture to a greased plate or parchment paper and let it cool at room temperature for about 1 hour, or refrigerate for 30 minutes until firm.
    • Grease your hands lightly with butter or oil, scoop small portions, and roll them into smooth balls.
  4. Coat & Serve

    • Roll each brigadeiro in finely chopped pistachios for a crunchy coating.
    • Place in mini cupcake liners for a decorative touch.
    • Serve immediately or store in an airtight container at room temperature for up to 3 days or in the fridge for 1 week.

Notes

  • For a stronger pistachio flavor, you can use pistachio paste instead of ground pistachios.
  • These brigadeiros can also be made with dark chocolate for a richer flavor profile.
