Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (2-3 minutes) using an electric mixer on medium speed.
  • Mix Wet Ingredients:
    • Add the egg and vanilla extract to the butter mixture and beat until well combined.
  • Combine Wet and Dry Ingredients:
    • Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  • Fold in Mix-Ins:
    • Gently fold in the chopped pistachios and dried cranberries until evenly distributed.
  • Shape the Cookies:
    • Roll the dough into small rounds (about 1 inch in diameter). Slightly flatten each round and use your fingers or the back of a spoon to form a small hole in the center, creating a wreath shape.
  • Decorate:
