These Polish Baked Paczki are light, soft, and filled with creamy custard or sweet jam. With a golden, buttery coating and a melt-in-your-mouth texture, these traditional Polish donuts are perfect for any celebration, especially for Fat Tuesday (Tłusty Czwartek) or as a delightful treat any time of year.

For the Dough:

  • 1½ cups flour
  • ¼ cup sugar
  • ¼ tsp salt
  • 2 tsp yeast
  • ¾ cup warm milk
  • 3 Tbsp oil
  • 2 egg yolks
  • 1 tsp vanilla extract
  • Extra flour as needed

For Coating:

  • 3 Tbsp melted butter
  • ½ cup sugar

For the Custard Filling:

  • ¼ cup sugar
  • 2 Tbsp cornstarch
  • 1 cup milk
  • 1 egg yolk

Instructions

  • Prepare the Dough:
    • In a bowl, combine warm milk, sugar, and yeast. Let sit for a few minutes until it becomes bubbly.
    • Add oil, egg yolks, vanilla extract, flour, and salt. Mix until smooth.
    • Knead the dough on a floured surface for about 5 minutes until it becomes elastic.
    • Cover the dough and let it rest for 10–15 minutes.
  • Make the Custard Filling:
    • In a saucepan, combine sugar and cornstarch.
    • Add milk and egg yolk, stirring constantly.
    • Bring the mixture to a boil for 1½ minutes, then remove from heat and chill.
  • Shape and Bake the Donuts:
    • Roll out the dough to about ½-inch thickness on a floured surface.
    • Cut out circles using a round cutter.
    • Place the dough circles on a greased baking sheet and let them rise for about 1 hour.
    • Preheat the oven to 350°F (175°C).
    • Bake for 10-12 minutes or until the donuts are lightly golden.
  • Coat and Fill the Donuts:
    • After baking, brush the warm donuts with melted butter.
    • Roll the donuts in sugar for a sweet, crisp coating.
    • Once the donuts have cooled slightly, fill them with the chilled custard or jam of your choice.

Notes

  • Ensure the dough is kneaded well for a smooth texture and soft donuts.
  • If you prefer jam instead of custard, feel free to substitute with your favorite flavor, like strawberry or raspberry.
  • If the dough feels too sticky during the kneading process, add a bit more flour as needed.
  • These paczki can be stored in an airtight container for up to 3 days.
