1 cup (250g) smooth peanut butter
6 tablespoons (90g) butter, softened
1 3/4 cups (220g) powdered sugar
1 teaspoon vanilla extract
8 oz (225g) dark chocolate
2 teaspoons coconut oil
Instructions
Mix the Peanut Butter Filling: In a large bowl, beat together the peanut butter, vanilla extract, and softened butter until smooth and well-combined.
Add the Powdered Sugar: Gradually add the powdered sugar and beat until fully incorporated into the peanut butter mixture.
Chill the Mixture: Refrigerate the peanut butter mixture for 30 minutes to firm it up.
Form the Truffles: Roll the chilled peanut butter mixture into small balls and arrange them on a baking tray lined with parchment paper. Refrigerate for 1 hour.
Melt the Chocolate: Chop the dark chocolate and place it in a heatproof bowl. Add the coconut oil and set the bowl over a pot of simmering water (double boiler method). Stir until the chocolate has completely melted. Let it cool for 5-10 minutes.
Dip the Truffles: Dip each peanut butter ball into the melted chocolate, gently shaking to remove any excess chocolate. Place the truffles back on the baking tray.
Set the Truffles: Refrigerate the truffles for at least 1 hour before serving to allow the chocolate to set.
Notes
You can use milk chocolate or white chocolate if you prefer a sweeter or creamier flavor.
