Ingredients

Scale

For the Main Ingredients:

  • 1 pound ground beef
  • 16 ounces rotini, cooked
  • 30 ounces (2 15 oz cans) sloppy joe sauce

For the Vegetables:

  • 1 small onion, diced
  • 1 green pepper, diced

For the Cheese:

  • 2 cups shredded cheddar cheese, divided

Instructions

  • Cook the Ground Beef and Vegetables: In a large pan, add the ground beef, diced onion, and green pepper. Cook until the ground beef is no longer pink and the vegetables are tender. Drain off any excess grease.

  • Add the Sloppy Joe Sauce: Pour in the sloppy joe sauce and stir to combine. Let it simmer for a few minutes to heat through.

  • Combine with Pasta: Add the cooked rotini pasta into the pan and stir to coat it well with the sauce mixture.

  • Melt the Cheese: Stir in 1 to 1½ cups of shredded cheddar cheese until melted and well combined.

  • Top with More Cheese: Once everything is mixed together, top the casserole with the remaining cheddar cheese. Heat on low until the cheese melts completely. You can cover the pan to help the cheese melt faster.

  • Serve: Garnish with fresh parsley if desired and serve warm. Enjoy!

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
