Ingredients

  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon white vinegar
  • 2 teaspoons vanilla extract
  • 2 tablespoons red food coloring
  • 16 ounces cream cheese
  • ½ cup unsalted butter
  • 4 cups powdered sugar
  • 23 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat sugar and oil until smooth. Add eggs one at a time, then mix in buttermilk, vanilla, vinegar, and food coloring.
  4. Slowly add dry ingredients to the wet ingredients, mixing just until combined.
  5. Divide the batter evenly between pans. Bake for 30–35 minutes, or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For frosting, beat cream cheese and butter until fluffy. Add powdered sugar gradually. Mix in milk or cream until desired consistency is reached.
  8. Frost and decorate the cooled cake as desired.

  • Use gel food coloring for more vibrant color with less liquid.
