This Reuben Dip is a creamy, savory appetizer that combines the classic flavors of a Reuben sandwich in a dip form. It’s perfect for parties or gatherings.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 6 ounces deli corned beef, chopped
  • 1 cup Swiss cheese, shredded
  • ⅔ cup sauerkraut, drained
  • ½ cup sour cream
  • ¼ cup Thousand Island dressing

For serving:

  • Rye chips
  • Sturdy crackers/chips
  • Veggies like carrots, celery

Instructions

  • Preheat the oven to 400°F and coat an 8×8-inch pan with cooking spray. Set aside.
  • Mix the base: In a large bowl, mix together the cream cheese, sour cream, and Thousand Island dressing until smooth.
  • Add other ingredients: Stir in the chopped corned beef, sauerkraut, and Swiss cheese until well combined.
  • Spread and bake: Evenly spread the mixture into the prepared pan.
  • Bake for 25-30 minutes, until hot and bubbly.
  • Cool and serve: Let it cool slightly, then serve with rye chips, crackers, or fresh veggies.

Notes

  • You can make this dip ahead of time and refrigerate it before baking for up to a day. Just pop it in the oven when you’re ready to serve.
  • For a lower-fat option, you can use reduced-fat cream cheese and sour cream.
  • This dip pairs wonderfully with crusty bread, if you prefer a bread-based option.
