This recipe is simple to prepare yet delivers impressive flavors and textures in every bite.

Ingredients

Beef and Rice

  • Beef Tenderloin (high-quality cut, quantity as desired, typically 1 lb or 450g)
  • Long-grain or Jasmine Rice (1 cup)
  • Salt (to taste)
  • Olive Oil (2 tablespoons)

Pepper Sauce

  • Black Peppercorns, freshly cracked (1 tablespoon)
  • Heavy Cream (1/2 cup)
  • Butter (2 tablespoons)
  • Shallots, finely chopped (1 small)
  • Beef Broth (1/2 cup)

Instructions

  1. Prepare the Rice: Rinse your rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions using a rice cooker or stovetop to ensure it is light and fluffy, perfect for soaking up the pepper sauce.
  2. Season and Sear the Beef Tenderloin: Pat the beef tenderloin dry and season generously with salt and freshly cracked black pepper. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides until browned and cooked to your preferred doneness, usually medium-rare to medium. Remove from the pan and let it rest for at least 5 minutes before slicing.
  3. Make the Rich Pepper Sauce: Reduce heat to medium in the same skillet and add butter. Sauté the finely chopped shallots until translucent. Add the crushed black peppercorns and toast briefly to unlock their aroma. Pour in beef broth and let it reduce slightly, then stir in heavy cream until the sauce becomes silky and thickened. Adjust seasoning with salt and more pepper as needed.
  4. Combine and Serve: Slice the rested beef tenderloin and arrange it over a bed of fluffy rice. Spoon the rich pepper sauce generously over the beef and rice, ensuring every bite is coated in the savory sauce. Serve immediately for the best experience.

Notes

  • Choose Quality Beef: Select a good grade of beef tenderloin for enhanced flavor and texture.
  • Don’t Overcook Beef: Monitor cooking time carefully to maintain juicy, tender slices.
  • Use Fresh Peppercorns: Freshly cracked peppercorns provide a brighter, more pungent flavor than pre-ground pepper.
  • Rest the Meat: Letting the beef rest keeps juices inside, maximizing tenderness.
  • Simmer Sauce Properly: Reduce the sauce slowly to concentrate flavors without burning the cream.
