Salmon Pasta

Creamy salmon pasta made with tender salmon chunks, garlic, parmesan, and silky cream sauce tossed with fettuccine for a rich and comforting dinner.

Ingredients

  • 12 ounces fettuccine pasta
  • 12 ounces fresh salmon fillet, skin removed and cut into chunks
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until tender.
  2. Heat olive oil in a large skillet over medium heat and cook salmon chunks for 3 to 4 minutes until lightly golden and cooked through, then remove and set aside.
  3. In the same skillet add minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir in grated parmesan cheese, cooking until the sauce becomes smooth.
  5. Add cooked pasta to the skillet and toss until evenly coated with the sauce.
  6. Return the salmon to the skillet and gently mix.
  7. Stir in lemon juice, parsley, salt, and black pepper.
  8. Serve warm with extra parmesan if desired.

Notes

  • Use freshly grated parmesan for the best texture and flavor.
  • Reserve a little pasta water to loosen the sauce if needed.
  • Fresh herbs like dill can be added for extra flavor.
