- 12 ounces fettuccine pasta
- 12 ounces fresh salmon fillet, skin removed and cut into chunks
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until tender.
- Heat olive oil in a large skillet over medium heat and cook salmon chunks for 3 to 4 minutes until lightly golden and cooked through, then remove and set aside.
- In the same skillet add minced garlic and cook for about 1 minute until fragrant.
- Pour in the heavy cream and stir in grated parmesan cheese, cooking until the sauce becomes smooth.
- Add cooked pasta to the skillet and toss until evenly coated with the sauce.
- Return the salmon to the skillet and gently mix.
- Stir in lemon juice, parsley, salt, and black pepper.
- Serve warm with extra parmesan if desired.
Notes
- Use freshly grated parmesan for the best texture and flavor.
- Reserve a little pasta water to loosen the sauce if needed.
- Fresh herbs like dill can be added for extra flavor.
