Instructions
- Pulse cashews in a food processor until finely crumbled.
- Add pitted dates, vanilla, and sea salt.
- Process until the mixture forms a sticky dough ball.
- Roll tablespoon-sized portions into smooth spheres.
- Roll each ball in shredded coconut until coated.
- Refrigerate for 30 minutes to set.

- Soak dates in warm water if they are too dry.
- Dampen hands to prevent sticking while rolling.
