Ingredients

  • 1.5 cups Medjool dates, pitted
  • 1 cup raw cashews
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon sea salt
  • 0.25 cup shredded coconut

Instructions

  1. Pulse cashews in a food processor until finely crumbled.
  2. Add pitted dates, vanilla, and sea salt.
  3. Process until the mixture forms a sticky dough ball.
  4. Roll tablespoon-sized portions into smooth spheres.
  5. Roll each ball in shredded coconut until coated.
  6. Refrigerate for 30 minutes to set.
