  • ¼ cup milk
  • Salt and pepper, to taste
  • 1 cup cooked sausage, crumbled (breakfast sausage or your choice)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 4 large flour tortillas (10-inch)
  • 2 tablespoons butter or oil, for cooking
  • Optional: salsa or hot sauce for serving

Instructions

  • Prepare the Egg Mixture:

    • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Cook the Eggs:

    • Heat a non-stick skillet over medium heat and add a little butter or oil. Pour in the egg mixture and cook, stirring gently, until just set but still slightly soft. Remove from heat and set aside.
  • Assemble the Roll-Ups:

    • Lay a flour tortilla flat on a clean surface. Spoon a portion of the cooked sausage onto the bottom third of the tortilla, followed by a portion of the scrambled eggs and a sprinkle of cheese.
    • Roll the tortilla tightly, starting from the bottom and tucking in the sides as you go.
  • Cook the Roll-Ups:

    • In the same skillet, add a little more butter or oil if necessary. Place the roll-ups seam side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Slice and Serve:

    • Remove from the skillet and let cool slightly before slicing into halves or thirds. Serve with salsa or hot sauce, if desired.

Notes

  • You can customize the filling by adding vegetables like bell peppers, onions, or spinach.
  • These roll-ups can be made ahead of time and stored in the refrigerator. Reheat them in the microwave or skillet before serving.
