These delicious, homemade savory breakfast pop-tarts are filled with country sausage gravy, scrambled eggs, and optional cheddar or jack cheese, all wrapped in a flaky, buttery dough. Perfect for a hearty breakfast or brunch.

  • Filling:
    • 1/4 pound breakfast sausage
    • 2 tablespoons all-purpose flour
    • 11/4 cups milk
    • 1/4 teaspoon seasoned salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon minced rosemary (optional)
    • 1 pinch sage (optional)
    • 5 eggs, scrambled (cooked separately from sausage gravy ingredients)
    • 1 cup shredded cheddar or jack cheese (optional for topping)
    • Everyday Seasoning (or other seasoning of choice, like from Trader Joe’s)
  • Poptart English Wig Dough:
    • 3 cups all-purpose flour
    • 1 teaspoon salt
    • 1 cup vegetable shortening
    • 1/2 cup butter
    • 1 large egg
    • 1 tablespoon white vinegar
    • 5 tablespoons cold water
    • 1 extra egg, plus 2 tablespoons cold water for egg wash

Instructions

  • Make the Country Sausage Gravy & Filling:
    • Heat a large skillet over medium-high heat. Cook the sausage, breaking it apart as it cooks, until browned and crispy (about 5-7 minutes).
    • Without draining the fat, stir in the flour until fully absorbed and let it simmer for 2-3 minutes.
    • Slowly whisk in milk, reduce heat to medium-low, and stir as the gravy thickens (about 4-5 minutes).
    • Remove from heat and stir in seasoned salt, black pepper, and optional rosemary and sage. Set aside.
    • In a separate skillet, scramble and cook the 5 eggs as desired, then set aside.
  • Make the Poptart Dough:
    • Preheat oven to 375°F (190°C).
    • In a large bowl, combine flour and salt.
    • Cut in shortening and butter with a fork until crumbly and pea-sized.
    • In a separate bowl, whisk together egg, vinegar, and cold water. Pour this into the flour mixture and stir until a dough ball forms.
    • Roll out the dough on a floured surface to 1/8-inch thickness. Cut out two rectangles for each tart (3×4 inches).
  • Assemble the Pop-Tarts:
    • Place the bottom crust on a parchment-lined baking sheet.
    • Wet the edges with egg wash and spoon scrambled eggs and sausage gravy onto each.
    • Place the top crust, gently stretch it over the filling, and use a fork to crimp and seal the edges.
    • Place the pop-tarts close together on the baking sheet.
    • Brush the tops with egg wash, add seasoning, and optionally top with cheese.
    • Bake for 25 minutes at 375°F.

  • These pop-tarts can be customized by adding extra ingredients like cheese or changing the seasoning.
  • You can prepare the dough and filling ahead of time and assemble and bake later.
