- 3 medium courgettes (zucchini), thinly sliced lengthwise
- 200 grams halloumi cheese, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced
- 2 tablespoons fresh herbs (mint or parsley), finely chopped
- Salt and pepper, to taste
Instructions
- Preheat your grill pan or skillet over medium-high heat until hot.
- In a small bowl, mix olive oil, lemon juice, garlic, herbs, salt, and pepper to make a marinade.
- Lightly oil the grill pan or skillet.
- Thread folded courgette ribbons and halloumi cubes alternately onto skewers.
- Brush each skewer with the herb marinade.
- Place skewers on the grill or skillet and sear for 2–3 minutes per side until golden and charred.
- Drizzle with remaining marinade and extra herbs before serving.
Notes
- Use a mandoline or peeler for uniform courgette ribbons.
- Soak wooden skewers in water for 30 minutes if grilling.
- Try adding cherry tomatoes or mushrooms for variety.
