Seedy Bread

Ingredients

  • 3 cups bread flour
  • 1 1/4 cups warm water
  • 2 teaspoons active dry yeast
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 3 tablespoons sunflower seeds
  • 2 tablespoons flax seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons pumpkin seeds

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl mix warm water, yeast, and honey and let sit until foamy.
  3. Add bread flour, olive oil, salt, sunflower seeds, flax seeds, sesame seeds, and pumpkin seeds.
  4. Knead the dough for about 8 minutes until smooth and elastic.
  5. Lightly oil a loaf pan and place the shaped dough inside.
  6. Cover and allow the dough to rise for about 40 minutes until puffy.
  7. Bake for 35 minutes until golden brown.
  8. Remove from the pan and cool on a rack before slicing.

Notes

  • Lightly toast the seeds before adding them to deepen their flavor.
  • Allow the bread to cool fully before slicing for the best texture.
