Ingredients
- Shrimp, 8-10 medium, peeled and deveined
- Sliced bread, 4 slices, white or sourdough
- Cheese, 4 slices, mozzarella or cheddar
- Butter, 2 tablespoons, softened
- Parsley, 1 tablespoon, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat a non-stick skillet over medium heat.
- Season shrimp with salt and pepper.
- Butter one side of each bread slice.
- Layer shrimp and cheese between bread slices, buttered sides out.
- Place sandwich in skillet and cook until golden and cheese melts, flipping carefully.
- Sprinkle parsley over the top.
- Cut in half and serve immediately.

- Use day-old bread for extra crispiness.
- Do not overcook the shrimp to maintain tenderness.
