Smashed Cucumber & Halloumi Star Salad

A fresh and playful salad combining smashed cucumbers, thinly sliced radishes, and star-shaped golden halloumi, tossed with herbs and a zesty dressing

Ingredients

  • 2 medium cucumbers, smashed and chopped
  • 200g halloumi, cut into stars and pan-fried
  • 56 radishes, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/2 teaspoon salt
  • Black pepper, to taste

Instructions

  1. Heat a nonstick skillet over medium heat for frying the halloumi.
  2. In a large bowl, toss smashed cucumbers, radishes, dill, and parsley. Season with salt, pepper, lemon juice, and olive oil.
  3. Pat halloumi slices dry, then cut into star shapes.
  4. Sear the halloumi stars in the hot skillet until golden brown on both sides, about 2 minutes per side.
  5. Gently place warm halloumi stars over the salad.
  6. Serve immediately and enjoy.

Notes

  • Smash cucumbers gently to keep them juicy but not mushy.
  • Dry halloumi before frying to get a crispy golden surface.
  • Chill salad briefly before serving for extra crispness.
  • Add extra herbs or a drizzle of olive oil for garnish.
