- 2 medium cucumbers, smashed and chopped
- 200g halloumi, cut into stars and pan-fried
- 5–6 radishes, thinly sliced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/2 teaspoon salt
- Black pepper, to taste
Instructions
- Heat a nonstick skillet over medium heat for frying the halloumi.
- In a large bowl, toss smashed cucumbers, radishes, dill, and parsley. Season with salt, pepper, lemon juice, and olive oil.
- Pat halloumi slices dry, then cut into star shapes.
- Sear the halloumi stars in the hot skillet until golden brown on both sides, about 2 minutes per side.
- Gently place warm halloumi stars over the salad.
- Serve immediately and enjoy.
Notes
- Smash cucumbers gently to keep them juicy but not mushy.
- Dry halloumi before frying to get a crispy golden surface.
- Chill salad briefly before serving for extra crispness.
- Add extra herbs or a drizzle of olive oil for garnish.
