This upscale version of mashed potatoes, infused with smoky gouda cheese and a touch of garlic, is perfect for dinner parties, Thanksgiving, or any special occasion. The creamy texture and rich flavor make it an unforgettable side dish!

For the Mashed Potatoes:

  • 3 lbs Yukon gold potatoes
  • 1.5 cups cubed gouda (170g / 6oz)
  • 2 cups cubed smoked gouda (227g / 8oz)
  • 1 cup heavy cream
  • 7 tablespoons unsalted butter, divided
  • 4 garlic cloves, chopped
  • 1.5 teaspoons salt (adjust to taste)
  • 12 teaspoons ground white pepper (adjust for heat tolerance)
  • ¼ cup chives, chopped (for topping)

Instructions

  1. Prepare the Potatoes:
    • Wash, peel, and chop the potatoes into large chunks (about 2-inch cubes).
    • Place the potatoes in a large pot and cover with cold water. Add 1 tablespoon of salt and stir.
    • Cover the pot and bring to a boil. Cook until fork-tender, about 10 minutes. Check by inserting a fork into a potato; it should glide through easily. Strain and set aside.
  2. Make the Cheese Sauce:
    • While the potatoes are boiling, cube the gouda cheeses and mince the garlic.
    • In a large pan over low heat, melt 6 tablespoons of butter. Once it starts sizzling, add the chopped garlic and sauté until golden brown (about 5 minutes).
    • Stir in the heavy cream and heat until warmed through.
    • Gradually add the cubed cheeses in 2–3 portions, allowing each portion to melt before adding the next. Stir continuously to create a thick, fondue-like sauce.
    • Add the white pepper and 1.5 teaspoons of salt. Taste and adjust seasoning as needed. Keep the sauce on low heat while preparing the potatoes.
  3. Mash the Potatoes:
    • Use a potato ricer to rice the strained potatoes into a large bowl. This ensures a silky-smooth texture. If you don’t have a ricer, mash by hand with a masher or use a food mill.
    • Pour the cheese sauce over the riced potatoes and mix until fully incorporated. Taste and adjust seasoning as desired.
  4. Bake and Broil:
    • Preheat your oven to 350°F (175°C). Spray a baking dish with nonstick spray to help brown the edges.
    • Transfer the mashed potatoes into the prepared baking dish and spread evenly.
    • Melt the remaining 1 tablespoon of butter and brush it evenly over the top of the potatoes.
    • Bake for 20 minutes. Then, broil for 3–6 minutes until the top is golden brown. Watch closely to prevent burning.
  5. Serve:
    • Remove the dish from the oven and sprinkle with chopped chives.
    • Serve hot and enjoy the creamy, cheesy goodness!

  • For extra richness, you can add more butter to the mashed potatoes or sauce.
